Region: Champagne Grand Cru, Cramant, Côte des Blancs, France

Viticulture: Organic and biodynamic farming. A 0.15-hectare south-facing parcel planted in 1951, with chalk reaching the surface. Hand harvested. 

Winemaking: Only the first pressing is used. Fermented with indigenous yeasts and aged for eight to nine months on the fine lees in French oak barrels, around 25% new. Traditional secondary fermentation and extended bottle ageing. Extra Brut dosage around 1–03 g/L.


Adrien Dhondt leads Dhondt-Grellet, a Champagne house known for its organic, biodynamic vineyards in France's Côte des Blancs. Adrien has focused on producing expressive, terroir-driven single-vineyard Champagnes, using minimal intervention techniques and indigenous yeasts.
